THE AVOCADO: MORE THAN GUACAMOLE

From guacamole to pancakes, the options with avocado is endless! Loaded with nutrients, and fiber it's easy to see why they've become so popular. We've compiled a few of our favorite dishes incorporating avocado for you to try out! 

QUINOA AVOCADO SPINACH POWER SALAD

 

1 cup dry quinoa
2 medium avocados
3 oz. baby spinach, more as desired
8 oz. cherry tomatoes
3 green onions (or finely diced red onion)
1-2 cloves garlic (I use 2)
2 Tbsp. red wine vinegar
1/8 tsp. salt

BLUEBERRY AVOCADO PANCAKES

1 cup all-purpose flour (or a gluten-free blend)
1 1/2 tablespoons sugar (any kind)
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 ripe California avocado, mashed
3/4 cup milk (dairy, nut milk, etc.)
1 egg
1 tablespoon melted coconut oil
1/2 teaspoon vanilla extract
1/2 cup blueberries
Butter for the pan
2 eggs, poached or fried

CRISPY BLACK BEAN TACOS WITH AVOCADO LIME SAUCE

Crispy Black Bean Tacos:
3 cups Mexican Black Beans
3/4 cups Mexican Cheese Blend
12 corn tortillas
2 tablespoons vegetable oil, separated

Avocado Lime Sauce:
2 avocados
1/2 bunch of cilantro
3 limes, juiced
1 jalapeño, seeded if desired
1/3 cup olive oil
1 teaspoon taco seasoning
1 pinch of salt
1 tablespoon sugar
2 tablespoons water

1 slice whole grain bread, toasted (1.5 oz)
1 oz mashed (1/4 small Haas) avocado
cooking spray
1 large egg
kosher salt and black pepper to taste
hot sauce (optional)
